Homemade Ginger Ale

I love ginger ale, it tastes way better that coke.

For this you need the following, it makes a lot though so you can halve everything.

2 cups of chopped fresh ginger
2 cups of sugar, this is not for healthy freaks
6 cups of water
8 cups of sparking water

1. Finely chop the ginger, add to a stock pot.

2. Stir in the sugar and the water, bring it to a boil and then leave it to simmer for about an hour so it creates a rich syrup.

3. Strain the syrup through a seive and leave it to cool.

4. Fill a glass with 1 part syrup and 2 parts sparking water plus some ice cubes and so good single malt scotch if you’ve had a hard day at the orofice.
